It doesn’t happen often that a restaurant becomes a legend. Bukhara needs no introductions. It has been one of the favorite places that serve delectable authentic north-western cuisine. It was opened in 1978 and will be celebrating 35th Anniversary next month (from 2nd to 11th August). Me as a blogger got a chance to meet J.P. Singh (Ex Chef Bukhara) and listen to all the stories behind this iconic restaurant and lip smacking dishes cooked in Clay-Ovens.Bloggers Meet at Bukhara ITC Maurya, New Delhi (1)

Bloggers Meet at Bukhara ITC Maurya, New Delhi (7)Bukhara has stood its ground all those years without making a single change in its menu. However 2 new dishes and 1 bread will be included in the menu this year, and details will be disclosed during the 35th Year Anniversary Celebrations.

We were served all the dishes on the current menu however I couldn’t click pictures of everything. Chef J P Singh hosted the event and delightfully explained all the dishes. How much thought, technique and skill goes behind each platter of kebab/ tikka or breads was quite mesmerizing. This time most of dishes came with a tag/flag. It was like a little trivia that most of the them have been sold over 1.5 million times.

Bukhara has bagged many prestigious awards during last 35 years of operations. Its Ten-time winner of the Times Food Award, four-time winner of the Restaurant Magazine’s Best Indian Restaurant in the World and three-time winner of the Miele Asia Award, Bukhara has most recently been named Best Restaurant in India 2014 by S.Pellegrino

My favourites were Prawn Tikka (succulent & delicious), Sikandri Raan (Flaky like pastry), Tandoori Aloo (spicy and tangy) & of course Dal Bukhara (rich flavourful). Do you know that Dal Bukhara is never taken-off the fire, and cooks for around 24 hours before serving. That definitely enhances the flavours ! This time I got a chance to look inside one of the busiest kitchens. Here is a collage –Bukhara ITC Maurya KitchenThis time I realized that there are lots of dishes for vegetarians, Tandoori Phool, Tandoori Salad, Tandoori Aloo, Paneer Tikka to name a few . I am hoping that the upcoming additions will have one vegetarian dish too. It also offers variety of breads like onion kulcha, pudeena paratha, butter naan, rumali roti etc.

No meal is complete without desserts.     I love food and ambiance of this place, only thing that hurts are prices, I wish they were lower and I could indulge in awesome food more frequently.
